Can I Opt Out of Google AI Overview on Desktop

No: Google's help pages say AI Overviews are a core part of Search and can't be turned off, and leaving Search Labs only affects experiments. On a desktop you can still avoid them. Search Cleaner, a free Chrome extension, hides the AI Overview on google.com search pages automatically. Google's own "Web" filter, under the search box or in its More menu, also shows plain links with no AI Overview, one search at a time. Neither stops Google generating overviews; they just keep them off your screen.
